Thoughts from Ronda…

Hello All,

    Wow, what a busy time of year! There is so much going on and I hope that you are enjoying all the graduations and celebrations.

    First, I would like to Thank everyone for their cards and words of encouragement in the loss of my mother-in-law. She was a wonderful lady, and I could not have asked for a better mother-in-law. I feel so much love from this community and I am so appreciative to have each one of you in my life.

    Congratulations to the Blue Winners at the KEHA State Convention: See photos enclosed in this Newsletter.

And, remember the Quilling Class on June 20th at 1:00 p.m. Our own, April Meyung will be teaching this class.  It will be a lot of fun.

    And last but certainly not least, Thank YOU volunteers and leaders for helping with the Peony Festival 5K Fun Run/Walk and we look forward to the Fair Open Exhibits Event June 12th—14th.

Dear Homemakers,

     I would like to thank each and every one who took part in my retirement celebration on April 26th. Thank you for the phone calls, gifts, cards, well wishes and visits. It was an emotional day for me and all of you made it special!

     I was totally humbled by the outpouring of love and support. Thank you again.

You all are the Greatest!

Cooking Through the Calendar

June— Fruited Cole Slaw

Ingredients:

2 Tbsp, Mayonnaise
1/2 tsp. apple cider vinegar (or any type vinegar)
2 tsp. sugar
3 Tbsp, crushed pineapple canned in 100% juice including juice
2 cups shredded or finely chopped cabbage
1/2 cup chopped apples (or fruit of choice: orange, mandarin oranges, pear)
1/2 cup raisins or dried cranberries

Directions:

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. Wash fresh produce under cool running water, using a vegetable brush to scrub veggies with a firm surface. Dry and cut to prepare for this recipe.
  3. Combine mayonnaise, vinegar, sugar, and pineapple in a small bowl. Stir to mix well.
  4. In another bowl, combine cabbage and other fruit.
  5. Pour dressing over cabbage and fruit. Stir to mix.
  6. Serve right away.
  7. Refrigerate leftovers within 2  hours.
  8. Makes 6 servings—Serving Size: 1/2 cup

Nutrition facts per serving: 100calories; 3.5g total fat; 0.5g saturated fat; 0g trans fat; 0mg cholesterol; 40mg sodium; 16g total carbohydrate; 2g dietary fiber; 14g total sugars; 1g added sugars; 1g protein; 0% Daily Value of vitamin D; 2% Daily Value of calcium; 6% Daily Value of iron; 2% Daily Value of  potassium.
