Thoughts from Ronda…

Hello all!  A few reminders for this month are:

The Gallatin County Homemakers will be receiving your entries for the Gallatin County Fair Open Class Exhibits on Wednesday, June 14th from 9:00 a.m. to 12:00 p.m.  Judging will begin at 1:00 p.m.  VOLUNTEERS ARE NEEDED to help enter items!  And lunch will be provided for all volunteers.  Please let me know if you can help that day.

Your Volunteer Service Hours forms are due to the Extension Office by July 1st.  This is a correction from the last newsletter.  A copy of the form is included in this newsletter.

We had great representation at our KEHA State Meeting this year.  Marie Allison, Louis Hiles, Sandy Stockdill and Tina Wehrle and I attended, with Marie and Louise as our voting delegates.

Gallatin County received 5 Blue ribbons for their cultural arts items.  A list of the winners with photos is included in this newsletter.  Congratulations to the winners!  Excellent job!

July 18—5:30 pm—The Back to Basics Homemakers will meet at the Extension Office to go to Roxanno’s for dinner
July 25—Area Homemaker Council—Gallatin County will host at the Extension Office.
August 21—7:00 pm—Homemaker Ice Cream Social – Gallatin County Extension Office

Recipe of the Month

Blueberry Cheesecake Bars

Ingredients:
Crust
1 cup graham cracker crumbs
3 Tbsp. unsalted butter, melted
3 Tbsp. unsweetened applesauce

Topping
1 1/2 cups nonfat plain Greek yogurt
3.5 oz. cream cheese, softened
1 Tbsp. cornstarch
1/4 tsp. salt
1/3 cup sugar
2 Tbsp. lemon juice
2 cups blueberries
1 Tbsp. lemon zest (optional)

Directions:
Preheat oven to 300 degrees F.

  1. Wash hands with warm water and soap, scrubbing for at least 20 seconds.
  2. Mix graham cracker crumbs, melted butter, and applesauce together in a medium bowl until combined. Evenly press crust into an 8x8 baking pan. Firmly press down on the crust with a dry measuring cup to make it more compact.
  3. Bake for 12 minutes. Remove from oven and set aside.
  4. Increase the oven temperature to 350 degrees F.
  5. In a large bowl, combine the yogurt, softened cream cheese, corn starch, salt, sugar and lemon juice. Fold in the blueberries and lemon zest (if using).
  6. Carefully drop spoonfuls of the topping mixture over the cooled crust and spread to make an even layer.
  7. Bake for 35 minutes or until it does not jiggle. Remove from oven and let cool completely. For best results, refrigerate 1 hour before cutting.
  8. Store in the refrigerator.
